2023年海底撈餐廳數量為1374家,僅比2022年多3家,不過平均翻檯率達到了3.8次每天,高於去年的3次每天;人均消費反而減少,為99.1元每人,少於2022年的104.9元,主要由於優惠增加。不過因整體消費環境復甦,消費者外出就餐次數相對增加,海底撈餐廳全年接待超過3.97億人次顧客,較上年增加43.7%,因而整體收入仍為增加狀態。

此外,2023年,海底撈的目標是提高在營門店盈利能力與運營效率。與此同時,海底撈放緩了餐廳網絡拓張的速度。截至2023年12月31日,集團共經營1,374家海底撈餐廳,其中中國大陸地區經營1,351家,港澳台地區經營23家;全年新增9家海底撈餐廳,重啟26家前期關停的海底撈餐廳,關閉了32家海底撈餐廳。

2023年,海底撈在總部層面成立了創新創業辦公室,調整創業品牌的策略規劃。除海底撈餐廳外,集團旗下亦擁有包括「嗨撈火鍋」、「苗師兄香鍋」、「五穀三餐」、「焰請烤肉舖子」、「漢舍」等品牌,實現火鍋、快餐、烤肉、中式正餐等多種經營業態。
